Thursday Temptations

This past week has really been about getting back on track with our lives.  Now that the peanut isn't restricting my diet to carbs and protein I am finally able to consume veggies again without the need to gag.  As with getting back into the swing of things, I'm trying to be more consistent on blogging and making menus again.  So, here is our menu for this week!

Thursday:
When Jess, Tim, and Owen came to visit us they made me their taco meatloaf recipe.  It was so good that I have been thinking about it ever since.  So, tonight we're going to make it again!  But instead of the taco seasoning which (unfortunately) has MSG in it, we'll be throwing in our own spice blend to season the meat.  I am really excited about making this again because it always makes a ton and the leftovers are super flavorful!!  We'll have it with a side salad (yay veggies!) and corn.

Friday:
With our re-assessed schedule, we decided that it would not only be fun but a good idea for our marriage to have a date night every Friday night (at least before the peanut comes).  This Friday is my turn to come up with a cheap, but fun date that focuses on us spending quality time together.  David just got this new basketball game and he's kinda obsessed with it.  So, I thought it would be fun to do a pizza and beer (non-alcoholic for the Mrs.) game night.  We'd make our own pizzas, drink fun beers, and play his B-ball character until his heart's content!  Maybe I'll be uber nice and get wings for him too!

Saturday:
Like I said on Thursday, the taco meatloaf makes a lot, so we'll be having leftovers today with sweet potatoes and corn.

Sunday:
Since I am supposed to have fish or seafood twice a week (although the baby hasn't really cooperated on that front lately) I am going to have David bring home some Logan's Santa Fe Tilapia.  I hope that without having to smell the fish cooking and it already being heavily seasoned, the peanut will concede to letting me get in some omega 3's for once.  I'll pair it with some steamed green beans and Logan's rice pilaf.

Monday:
I am going to attempt a meatless Monday today.  However, I have to make sure that I'm still getting protein for the baby so it's going to be a little challenging.  Lots of peanut butter or cheesy food today!  I saw this recipe on Skinnytaste.com and thought it would be the perfect meatless Monday food!  With all the pasta and veggies I should still feel full and not miss this meat!  Gina's three cheese tortellini and mushroom soup looks warm, comforting and so tasty.  I can't wait to try it out!

Tuesday:
Today we're going to go to an old favorite of mine.  It's a little messy, but very tasty and much healthier than McDonalds.  We're going to make Healthy Baked Chicken Nuggets from skinnytaste.  We'll have it with sweet potato tater tots and steamed green beans.  I love dipping my food... doesn't everyone?  Tater tots and nuggets... best meal ever!

Wednesday:
An easy, quick, and delish meal that is a go-to anytime we know we're going to have a busy day is Pioneer Woman's Cheeseburger Salad.  I don't go to the trouble of making my own croutons (especially when I have two BOGO bags of them from Publix) but the meat mixture is so good, you won't miss it. I do however love the pickles in the salad.  I'm hoping that the peanut will be fooled by the yummy meat mix and ignore the fact that I'm also shoveling in a ton of lettuce and veggies.  We'll see!
