Thursday Temptations

Thanks to our lovely Macrobid pill, I didn't get to make hardly any of the meals that I was planning to make.  Yeah.  My lovely gag reflex was in overdrive this past week and let me tell you, if you weren't a fruit, or a carb, or chicken, you weren't going anywhere near my face!  The hound-dog-nose came out to play again and all of my delish groceries went to waste.  So, with that behind us, I am determined to have at least a few healthy meals before I head to St. Marks, Georgia, and North Carolina.

Thursday:
Since today is our shopping day, we'll have to whip up a quick lunch before David heads to work.  So I think we'll make BLT's with Alexia's sweet potato tots.  That way I can eat the leftover tots for dinner and still have a lot of healthy carbs (like the doc's menu told me to have)!  And no, David won't actually eat the BLT... his will be a BLC instead.  Subbing the tomato for cheese.  At least he's eating lettuce, right?

Friday:
For David's day off, we'll be running a couple errands trying to get everything for the trip next week.  Although it'll be a hectic day, I really want to try that skinnytaste soup from last week.  So for dinner, we'll make Skinnytaste's Three Cheese Tortellini and Mushroom Soup.  I am hoping that this will be filling enough to carry me to my bedtime snack of ice cream and nuts.

Saturday:
Today we'll have the leftover soup and some homemade garlic bread.  It makes 8 servings so I'll plan to use half of the servings while I'm here and freeze the other half so David won't starve while I'm gone.  Not that he would starve... but peanut butter crackers for every meal doesn't really sound like a balanced diet to me.  Maybe I'm just too picky?

Sunday:
Today I'm gonna make the Healthy Baked Chicken Nuggets and Parmesan Roasted Green Beans.  I figure if I'm gonna heat up the kitchen, I better make it worth while.  David and I both love the green beans cooked this way.  The slightly crisp texture of the lightly browned green beans turn this ordinary veggie into something special.  And if David likes a veggie, then I better use that to our advantage!

Monday:
Today is my last day before the craziness starts and I plan to make it a productive one.  I am going to finish packing the dog's things today, organize all the decorations for the shower that I need to bring, try to pick the house up a bit before I go, and do any last minute shopping for toiletries and such that I'll need for the trip.  I would normally do all of this the day before I leave, but with tomorrow being our doctor's visit, there's just no way that is going to happen.  With all the commotion of the day, I'll be going to an old staple of cheeseburger salad.  This will be a last ditch effort to get in some veggies before two days of faster (drive-thru) food.

Tuesday:
Today we have our next ultrasound and doctor's appointment.  I'm very excited about this appointment because I just can't wait to see the little human growing and how much he or she has changed since our last appointment.  The only part I'm not thrilled about is the time.  To make sure David could make it, we had to plan it early enough that we could travel there, have an hour long appointment and travel back.  And the only time they had available was 8:30 AM.  Ugh.  So we'll have the doc appointment and probably grab some lunch on the way home.  So that when we get home, David can load my vehicle and get ready for work.  I will enjoy some leftover cheeseburger salad for dinner.

Wednesday:
Like yesterday, we are having an early, but exciting morning today.  We'll go to an Ultrasound & Pregnancy Spa at 9AM to have a gender determination ultrasound.  I am obviously excited about this and can't wait to find out if our peanut is a girl or boy!  After the appointment we'll head back to our house, grab the dogs and head to meet my parents.  They will meet us halfway from our home to St. Marks and take me and the dogs to their condo.  And I'll stay there for a few days.  As for food today... lots of snacks and if I am productive enough on Tuesday, we'll have PB&J sandwiches with all-natural Cheetos and some kind of hand-held fruit (apple, pear, grapes).  It'll be a packed day, but a fun day!
